Lemon Dream Oatmeal Bars
This is a crazy-good dessert bar. This was so easy and ridiculously fast . . . a bake-sale dream, for sure.

G/F: Can be, with alteration.*
Preheat oven to 350 degrees.
Ingredients:
1 Can (14 oz.) Sweetened Condensed Milk (not evapoated)
Zest of 1 Lemon
1/2 Cup Fresh Lemon Juice (about 3 lemons)
1 1/2 Cups Flour*
1 Cup Old Fashioned Oats (not instant)*
1 Cup Packed Brown Sugar
2/3 Cup Unsalted Butter
1 TSP Baking Soda
Pinch of Salt
Grease 9x13 inch glass pan with butter. Mix milk, lemon zest and lemon juice in bowl. Set aside. Mix remaining ingredients in separate bowl until crumbly.
Sprinkle half of the crumble mixture into the pan, press gently. Spread lemon milk mixture over bottom layer. I like to drizzle with a large spoon or you can also pipe it. Sprinkle remaining crumble mixture and press down gently.
Bake for ~20 minutes or until golden brown on bottom and top. Center will be soft but set. Cool completely. Cut into desired sizes.
Super rich lemon dream. Not TOO lemony. Not TOO sweet. Just right!
